Guacamole Stuffed Sweet Potatoes

Serves 4

Ingredients:

4 large sweet potatoes

1 Tbsp extra virgin olive oil

1 tsp italian seasoning

3 medium ripe avocados

Juice of 1 lime

2 medium tomatoes, finely chopped

2 garlic cloves, minced

1/4 cup fresh cilantro, finely chopped

1/2 tsp cayenne pepper

sea salt & black pepper, to taste

FOR SERVING

sliced black olives

chopped baby spinach

pomegranate arils

bell pepper

fresh cilantro

Directions:

1) Preheat the oven to 350 F degrees and line a baking sheet with parchment paper.

2) Wash the sweet potatoes and poke them several times with a fork. Rub them with oil and sprinkle with seasonings. Place them on the baking sheet and bake for 45 minutes or until tender.

3) Meanwhile in a large mixing bowl, add the avocado and mash it with a fork. Add the lime juice, tomatoes, garlic, onion, cilantro, cayenne, salt and pepper. Mix to combine well.

4) Once the potatoes are finished, cut a slit on the top of each and stuff them with guacamole. Serve with your other desired toppings and enjoy!
