New Meal Who Dis?

You guys, we KNOW #MrParker slays in the kitchen, BUT I think this new meal plan has ignited his creative GENIUS (now too bad he doesn't read my blog to read this compliment! #truth)

People have asked me what this new "diet" is and I HATE the word diet because to me just using that word means it has an end date.  And this new meal plan is a LIFESTYLE - we don't talk about things we CAN'T eat, we talk about what we CAN eat so we're full, satisfied and IN CONTROL.

  • No calorie counting
  • No measuring food
  • No containers
  • No cutting out food groups (carbs I'm looking at YOU)
  • No deprivation
  • Ability to follow this program when you're out to eat, traveling - WHATEVER

Avocado Zucchini with Chicken

Makes 2 Servings (approx 2 Cups Zucchini each)

Ingredients:

1/2 medium ripe avocado

3/4 cup reduced fat (2%) plain Greek Yogurt

1/2 tsp. Ground Black Pepper

1/2 tsp garlic powder

1/2 tsp onion powder

NonStick Cooking Spray

1lb Chicken tenderloins

4 medium zucchinis, spiralized

Handful sliced baby portabella mushrooms  

1/2 vidalia onion

2 tsp grated Parmesan Cheese

Instructions:

  1.  Combine Avocado, yogurt, 1/4 tsp pepper, 1/4 tsp garlic powder and 1/4 tsp onion powder in a medium bowl; mix well and set aside.
  2. Heat large nonstick skillet, lightly coated with spray over medium heat.
  3. Add chicken with remaining seasoning and cook through.  Set aside once cooked.
  4. Sautee mushrooms and onions in same pan.  Cook until onions are translucent.
  5. Add zucchini in.  Cooking, stirring frequently for 2-3 mins.  Drain excess water.
  6. Add chicken and mixture stirring frequently for 1-2 mins.
  7. Evenly divide zucchini, top with cheese and serve immediately.
